Big news for Park City’s dining scene! Chef Seth Adams is stepping away from operations at Riverhorse on Main and its sister spot, Palomino, closing out a remarkable chapter at one of Main Street’s most beloved fine dining destinations.
Seth has long been recognized as one of Utah’s top culinary talents. Over his tenure as Executive Chef and co-owner, he helped guide Riverhorse on Main to national acclaim, earning the Forbes Travel Guide Four-Star distinction, AAA Four Diamond distinction, and the DiRoNA Award of Excellence year after year. His influence shaped the restaurant’s culinary identity into what locals and visitors know and love today.
“During my time at Riverhorse on Main, it has been a privilege to be part of such a talented team of individuals dedicated to creating unforgettable dining experiences for locals and visitors from all around the world,” said Chef Seth Adams. “It is an honor to be considered a leader in Park City, and I look forward to continue serving the community in my various roles as a chef, business owner, neighbor, and friend.”
Alongside Seth’s nearly 30 years in the kitchen, his wife Casey brought over two decades of design direction to both restaurants’ spaces. Together, they’re reflecting on the journey with gratitude for everyone who helped make it possible.
“We are incredibly proud of what we accomplished and are deeply grateful to every member of our team who contributed to that success,” said Casey Adams. “We have loved giving so much of ourselves to this work, and we appreciate this community and everything we have been fortunate enough to create and give back over the years.”
Though Seth and Casey are no longer with Riverhorse on Main or Palomino, they’re not going far. The two are already eyeing new ventures that will bring their signature hospitality to Park City in fresh ways.
“We will always be grateful for what we experienced at Riverhorse on Main and Palomino and for everyone who was part of the adventure,” the Adamses shared. “We are actively pursuing new ventures and opportunities that will allow us to deliver the same exceptional hospitality our patrons have experienced for decades.”
In the meantime, Chef Seth will continue in his role at Salt Box Eatery and Catering, where he is the sole owner.
