Make your ice cream like Bambara does in their amazing ice cream sandwiches.
4 cups heavy cream
1 cup half and half
1 1/4 cups sugar
3 whole large eggs
2 large egg yolks
1 vanilla bean, split in half lengthwise
1 tsp. vanilla extract
Scald the cream with the vanilla bean and vanilla extract. Cool slightly, about ten minutes. Whisk together the eggs, yolks, and sugar in a medium mixing bowl. Slowly stir in the cream, stirring constantly. Return the cream mixture to the stove and cook on medium heat until slightly thickened, stirring constantly. Strain the cream through a sieve and cool completely.
Prepare the ice cream in an ice cream maker according to instructions. Freeze overnight to set completely before serving.
Don't over work the ice cream in the machine. The ice cream is supposed to be soft upon extraction. It will set in the freezer. You can add fun treats to the ice cream once it is done in the machine. Once extracted, stir in nuts, chocolate pieces, oreos, etc. Then freeze normally.
This recipe includes whole eggs as well as yolks. The whole eggs give the ice cream lighter, fluffier texture. If you prefer richer, more dense ice cream, use 14 large yolks instead of the whole egg/ yolk combination that the recipe calls for.
