Start sharpening your knives because Executive Chef Nathan Powers is stepping out from behind the scenes at Bambara, a Kimpton restaurant in downtown SLC and joining 15 other Kimpton chefs in a brand new series called "Cut."

Salt Lake magazine Dining Award winner, Chef Powers will be hosting "Mastering the Cut," a knife techniques demonstration and lunch on Sept. 29 from 1 p.m.–4 p.m.

Chef Powers has a unique menu lined up for the class that will demonstrate important knife skills and proper techniques:

- Iced Oysters with Champagne Shallot Mignonette (the brunoise)

- Watermelon Gazpacho with Basil and Mint (the chiffonade and medium dice)

- Butterflied Leg of Lamb with Zucchini and Goat Cheese Risotto (butchered, grilled whole and carved)

This is a rare opportunity to unlock the secrets about knives and cooking from the best of the best, and as Powers says, "The culinary appeal of each dish lies directly in the knife skills."

Participants will be able to take written recipes home. Cost to attend is $35 and $10 for optional wine pairings. Call 801-363-5454 or visit facebook.com/BambaraSLC to make required reservations.
