To wow the judges, the team, headed by executive Chef John Murcko, prepared a nettle and mushroom tea sandwich followed by a micro-green salad with mushrooms. The delicious entrees to follow were a soft shell crab with uringi mushroom and beef cheeks with smoked shitake mushrooms.
For desert, the judges enjoyed porcini ice cream and almond cake.
Talisker’s director of wine and spirits, Sean Marron provided wine pairings with the meal for the judges.
This isn’t the first win for Murcko; he was also champion in 2009 and was a semifinalist for the James Beard Awards earlier in 2012.
