Tired of turkey yet?
Got to admit, I am already a little weary of even thinking about brining, roasting and mashing. I'm not sure I believe in brining anyway. Buy an excellent quality, organic turkey from Liberty Heights Fresh, toast it carefully and baste it, and you'll have moist meat, anyway.
At any rate, I'm thinking pork for Thanksgiving sounds good. Or even going with Calvin Trillin's time-honored suggestion of switching out turkey for pasta carbonara.
