Last week we went to a tasting at Faustina in downtown Salt Lake to see what changes chef Billy Sotelo has made in the menu. We were delighted all the way through the meal, from the summery watermelon and goat cheese salad to the seared scallops on al dente angel hair
to the silky panna cotta (at the top o'the blog.) Sotelo has a certain touch that combines rich, full flavors with lightness of texture and delicate heft so that his food never weighs you down, especially perfect this time of year.
