Kimi Eklund had a vision when she set out to create her bistro at Solitude, a personal vision. "Having the ability of sharing my life's passion in a setting as magnificent as Solitude is absolutely a dream come true," she says.
But it was a special culinary partnership with Chef Matt Anderson that helped her create a unique mountain dining experience.
"With Chef Anderson by my side, life can't get much better," she says. "His creativity and dedication are the keys in helping me realize my vision for kimi's."
The philosophy behind kimi's is based on the cornerstones of forest, lake and meadow as backdrop for showcasing a variety of regional Utah cuisine.
"Our gastronomic vision is a modern interpretation of mountain-inspired cuisine embellished by new and old European techniques and textures," Eklund says.
